Carrot soup with meatballs


A tasty Dutch recipe. The starter contains the following ingredients: meat, winter carrot, oil, orange juice, chicken broth (from tablet), fresh beef soup balls (about 200 g), freshly ground black pepper and whipped cream.

Directions

  1. Clean winter carrots and slice them.
  2. Heat 1 tbsp oil in soup pan and gently bake carrot slices for 5 min.
  3. Add orange juice and stock and bring to the boil with lid.
  4. Soup 10-15 min.
  5. Gently simmer.
  6. Meanwhile, press soupballs a little flatter, to form a pepernoot.
  7. Slice a bit of coarse pepper above it.
  8. Heat residual oil in frying pan and brown balls in 5 min.
  9. Put the hand blender into a pot and puree soup.
  10. Season with salt and pepper.
  11. Soup soup into four deep plates and distribute meatballs over it.
  12. Whip cream with soup..
