Cut the onion into thin rings and put in a bowl. Bring the vinegar to the boil with the sugar and salt. Pour over the onion.

Heat the oil in a large frying pan and stir fry the kale and pimenton 4 min. Add pepper and salt if necessary.

Remove from the pan and allow to cool for 2 minutes. Drain the peppers and cut into strips of ½ cm.

Drain the red onion and mix with the kale and paprika. Sprinkle with the croutons.
