Cauliflower curry with pappadums
Curry with cauliflower, potato, Indian curry paste, tomato, fresh coriander and pappadums.

Clean the cauliflower and divide into florets. Peel the potatoes and cut into cubes. Heat the oil in a frying pan and fry the stir-fry pieces for 3 minutes. Add the potatoes and cook for 1 min. Stir in the curry paste and cook for 1 min.

Add the tomatoes, coconut milk and cauliflower and bring to the boil. Let the curry cook gently for 10 minutes. Heat the rest of the oil in a large frying pan. Bake the pappadums one by one for 2 to 3 seconds. in the hot oil.

Drain the papadums on kitchen paper. Cut the coriander. Bring the curry to taste with salt. Sprinkle the curry with coriander and serve with the pappadums.
