Chicken cajun with cucumber salad
A tasty recipe. The main course contains the following ingredients: poultry, white rice (white (bag 1 kg)), cucumbers, onion (finely chopped), white wine vinegar (bottle 500 ml), pineapple pieces (227 g), olive oil, chicken breast ((380 g), in 4 pieces) and spice mix (cajun (90 g)).

Prepare the rice according to the instructions on the package. Scrape the cucumbers into slices and scoop them with the onion and wine vinegar. Put the pineapple pieces in a sieve and collect the pineapple juice. Mix the pineapple pieces through the cucumber mixture and season with salt and pepper.

Heat the oil in a frying pan. Sprinkle the chicken fillet with the spice mix and bake for 10 minutes on both sides until golden brown. Add the pineapple juice and roast the chicken breast covered over low heat for 5 minutes until done. Take the lid off the pan for the last minute and reduce the cooking liquid.

Divide the rice and the chicken cajun over 4 plates. Serve with the cucumber salad.
