Directions

  1. Carve each chicken breast with a sharp knife over the width four times to halfway the thickness. Cut the garlic into slices.
  2. Heat the oil in a large frying pan and fry the garlic and chicken breasts for 2 minutes on each side over medium heat until golden brown.
  3. Add the oregano, tomato cubes, pepper and salt to taste. Let the chicken in the pan without lid simmer for 8 minutes on medium heat.
  4. Turn halfway. In the meantime, heat the oven grill to the highest setting.
  5. Cut the mozzarella into thin slices. Remove the pan from the heat and spread the slices of mozzarella over the chicken breasts.
  6. Grind some fresh black pepper over it and put the pan under the oven grill for 1 min until the cheese begins to melt. (Note: the handle of the pan becomes hot.).
  7. Spoon some tomato sauce in the middle of the plates and spread the chicken breasts over it.
