Chicken fillet with avocado salad
A nice Mediterranean recipe. The side dish contains the following ingredients: poultry, chicken fillets (free range), fresh ginger ((bag 150 g), peeled), garlic (finely chopped), olive oil, chilli (mill), pers oranges, coriander (15 g), avocado and shallots ( coarsely chopped).

Cut the chicken fillets lengthwise into 3 slices. Slice the ginger. Mix with garlic, 2 tbsp oil and chilli pepper to taste. Rub the chicken with it. Put the pieces of chicken together in a bowl. Put in the refrigerator for 1 hour.

In the meantime cut the peel of the oranges and cut the wedges between the fleece. Keep a few sprigs of coriander behind and cut the rest roughly. Cut the avocado half in half. Remove the kernel and scoop out the flesh with a spoon from the peel. Cut it into cubes of 1 cm and mix with the orange wedges, shallot, coriander, 2 tbsp oil, pepper and salt.

Light the barbecue or heat the grill pan. Sprinkle the chicken with salt and grill for 5 minutes on the barbecue or in the grill pan. Turn halfway. Sprinkle with the rest of the coriander and serve with the avocado salad.
