Chicken rolls with pesto
A tasty Italian recipe. The main course contains the following ingredients: poultry, pine nuts (80 g tray), Parmesan cheese, garlic, basil ((15 g), only the leaves), extra virgin olive oil, chicken fillets (about 380 g) and butter.

Preheat the oven to 180 ° C. Roast the pine nuts in a frying pan without oil or butter in 3 min. Golden brown. Let cool on a plate.

Grate the cheese. Put the pine nuts, cheese and garlic in the food processor and grind. Add the basil and oil and briefly reduce to pesto. Season with salt and pepper.

Place each chicken fillet between 2 pieces of cling film. Beat the fillets with a saucepan into thin pieces of about 1/2 cm thick. Remove the foil and brush the fillet loosely with pesto. Roll them up and secure with a cocktail stick. Sprinkle with salt and pepper.

Heat the butter in a frying pan and fry the chicken rolls in 2 min. On high heat around brown. Place in the oven dish and bake for 15-20 minutes in the oven. Cut into slanted slices and serve with the rest of the pesto. Tasty with baked potatoes and broccoli.
