Chinese stir-fry with vegaspekjes and vegetables
A vegetarian noodle dish with mushrooms, cabbage and carrots. Full of vegetables and flavors.

Bring a generous pot of water to the boil.

Clean the onions and garlic cloves. Chop the onion and finely chop the garlic.

Peel the ginger and cut finely. If necessary, wipe the mushrooms with kitchen paper and cut into slices. Cut the celery coarsely.

When the water boils, add the noodles and boil for 5 minutes until al dente. Drain.

In the meantime, heat the oil in a frying pan and fry the bacon strips in 5 minutes.

Heat the oil in a stir frying pan the onion, garlic, ginger and mushrooms in medium heat on 3 min.

Add the cabbage and cook for another 1 min. Change regularly.

Mix the noodles with the vegetables in the stir-fry and add the hoisin sauce. Heat up for 1 min.

Remove the stir fry from the heat and mix in the carrot julienne. Spread the plates and sprinkle with the celery, bacon strips and cashew nut pieces.
