Directions

  1. Cut the tomatoes into cubes and the bunch in rings.
  2. Clean the lime. Grate the green skin and squeeze out the fruit.
  3. Mix the tomatoes, spring onions and 3 tablespoons of lime juice and season to taste with salt and pepper.
  4. Mix the yogurt with the lime zest and season with salt and pepper.
  5. Heat a skillet without oil or butter and fry the mince with the cumin for 5 minutes on medium heat.
  6. Season with pepper and salt. Bake the beans in the last minute.
  7. Meanwhile, halve the avocado, remove the kernel and scoop out the flesh with a spoon from the peel. Prepare a puree with a fork.
  8. Take the mince out of the pan and keep covered warm on a plate. Heat another frying pan and fry both wraps each in 1 pan 1 min.
  9. Turn over and divide the avocado puree, cheese and minced meat. Heat for 2 more minutes or until the cheese has melted, possibly with the lid on it.
  10. Divide the tomato salsa and lime yogurt over it and serve immediately.
