Peel the ginger and finely chop together with the garlic. Heat the oil in a saucepan and fry the ginger and garlic for 1 min.

Add the ketchup, vinegar, soy sauce, cornstarch, sugar and pineapple pieces with syrup.

Bring the sauce to the boil and simmer for 3 minutes on low heat. Stir frequently.
