Chops with shallot-tiger sauce
A tasty French recipe. The main course contains the following ingredients: meat, sharp, smooth mustard, lemon juice, extra virgin olive oil with garlic and chilli pepper (250 ml bottle), rib chops, shallots, butter, thyme, red wine, beef stock (a 380 ml) and whipped cream.

Combine mustard, lemon juice and oil. Cover chops with mustard mixture and sprinkle with salt and pepper. Have a taste of at least 30 minutes.

Chop the shallots and coarse chop. Melt 25 g of butter in the saucepan. Season the shallots for 5 minutes on a low heat. Sprinkle thyme leaves over pan of twigs. Add wine and allow to evaporate. Pour the fond into pan and let it simmer for 10 minutes. Meanwhile, heat residual butter in casserole. Chop chops on both sides quickly brown and then on medium heat in 10 min. Brown and cooked, halfway turning. Mix whipped cream with shallots and season to taste with salt and pepper. Place chops on four warm plates and create shallot sauce. Tasty with boiled potatoes and stir-fried spinach.
