Directions

  1. Heat the olive oil in a frying pan and heat the grilled eggplant over a low heat for 5 minutes.
  2. Meanwhile, put 200 grams of mesclun salad in a bowl.
  3. Then cut the warm grilled eggplant into pieces and add it to the salad.
  4. Sprinkle the smoked salmon, honny cress and yoghurt dressing over the salad and mix.
  5. Season with (freshly ground) pepper and possibly salt.
