Heat the olive oil in a frying pan and heat the grilled eggplant over a low heat for 5 minutes.

Meanwhile, put 200 grams of mesclun salad in a bowl.

Then cut the warm grilled eggplant into pieces and add it to the salad.

Sprinkle the smoked salmon, honny cress and yoghurt dressing over the salad and mix.
