Heat a skillet without oil or butter and toast the walnuts for 2 minutes. Remove from the pan and leave to cool on a plate. Leave the pan on the fire.

Roast the caraway seed for 2 minutes. Add the vinegar and maple syrup and bring to the boil. Add the coals and warm for 3 minutes.

Remove the pan from the heat and allow to cool to room temperature in 30 minutes.

Peel the pears, halve in length, remove the core with a spoon and cut the flesh into slices. Cut the leaves of the parsley roughly.

Mix the coals with the pear and parsley and sprinkle with the walnuts.
