Couscous with plum and red onion
A tasty recipe. The vegetarian side dish contains the following ingredients: couscous, red onion (chopped), vegtable prunes (without pit (bag 500 g), finely chopped), unsalted pistachio nuts (peeled (bowl 95 g)) and fresh mint (finely chopped).

Let the couscous in a bowl with 500 ml of boiling water for 6 minutes.

Stir the grains with a fork.

Scoop the onion, prunes, pistachios and fresh mint and season the couscous with salt and pepper.

Also tasty with some olive oil and lemon wedges as a garnish..
