Crayfish cocktail with whiskey sauce

For the sauce, mix whiskey, mayonnaise, ketchup and tabasco in a bowl. Season with salt and pepper and set aside until use.

Cut the tomatoes into quarters, put in a bowl and scoop with the crayfish.

Slice the chives.

Divide the arugula over the bottom of the glasses. Spoon the crayfish and tomatoes on it.

Spread the whiskey sauce over the glasses and garnish with the chives.
