Crispy coriander tofu
A nice Mediterranean recipe. The vegetarian lunch contains the following ingredients: tofu naturel (375 g AH Organic), eggs (M) (AH Organic), garlic (AH Organic), fresh coriander (AH Organic), salt and pepper, rusks (AH Organic), olive oil ( AH Biologisch) and young leaf lettuce (AH Biologisch).

Directions

Tofu cut into approx.
-
8 slices of 1 cm thick and pat dry well.

Peel and squeeze garlic.
-
Chop coriander finely.
-
Beat eggs in deep plate with garlic, coriander and generous salt and pepper.

Crumble over another plate of crumbs.

Stir tofu through egg mixture, leave for approx.
-
5 minutes (turn regularly) and then remove through crumbs.

Heat olive oil in frying pan and brown tofu in approx.
-
5 minutes.

Serve on bed of organic young leaf lettuce..
