                                Cut bits of bone out of pork chops with a sharp knife.
 - 
                                Cut the meat into strips and put it in a frying pan.
 - 
                                Add onion, garlic, 1 tbsp salt and orange juice.
 - 
                                Add as much water that meat is just underneath.
 - 
                                Bring to the boil and let meat cook over high heat (without lid) until all the moisture has evaporated.
 - 
                                Then, turn down the heat and roast the meat in its own fat for approx.
 - 
                                1 hour until crisp and brown.
 - 
                                Delicious with tacos and salsa of sweet potatoes..
