Crispy pork belly
A nice mexican recipe. The main course contains the following ingredients: meat, shoulder chop, onion (coarsely chopped), garlic (coarsely chopped) and orange juice.

Cut bits of bone out of pork chops with a sharp knife.

Cut the meat into strips and put it in a frying pan.

Add onion, garlic, 1 tbsp salt and orange juice.

Add as much water that meat is just underneath.

Bring to the boil and let meat cook over high heat (without lid) until all the moisture has evaporated.

Then, turn down the heat and roast the meat in its own fat for approx.

1 hour until crisp and brown.

Delicious with tacos and salsa of sweet potatoes..
