Grate the gruyere and finely chop the chives.

Cut 8 slices of bread. Spread both sides of the slices thinly with butter.

Spread 1 side thinly with mustard and sprinkle with the cheese. Put 1 slice of ham and then a slice of bread. Press lightly.

Heat a frying pan with non-stick coating. Bake the sandwiches per 2 in 8 min. Golden brown, turn them after 4 min. Keep warm under aluminum foil.

In the meantime, heat the rest of the butter in a large frying pan. Fry the eggs for 3 to 5 minutes on medium heat.

Place the sandwiches on 4 plates and put the egg on them. Season with salt and pepper and sprinkle with the chives. Bon appétit! .
