Dominique persones chocolate pudding
Chocolate pudding from chocolatier Dominique Persoone from Belgium.
Dissolve the cocoa powder and cornstarch in the cold milk.
Cut the chocolate into pieces. Scrape the marrow from the vanilla pod.
Bring the rest of the milk to the boil with the sugar, the vanilla pod and the marrow.
Let it simmer for 5 minutes, so that the taste of the vanilla comes loose and the sugar dissolves.
Remove the vanilla pod and add the pieces of chocolate. Mix until completely melted.
Add the cocoa powder mixture to the hot milk while stirring. Let it boil for a short while so that the milk binds.
Pour the mass into the glasses or jars and let stiffen in the refrigerator for at least 3 hours.
