Duck breast fillet with apples and syrup
Tasty duck breast fillet with fresh oregano, syrup and apples.

Cut the oregano fine and the spring onions in thin rings.

Cut the fat layer of the duck breast fillets crosswise to the centimeter with a sharp knife.

Rub the meat side with pepper, salt and taste a little bit of pimento.

Heat a skillet and place the fillets on the fat side in the pan. Bake the fat side over medium heat in approx. 8 min. Crispy brown.

Turn the duck breast fillets and bake the meat side in approx. 4 min. Brown.

In the meantime, peel the apples, halve them, remove the core and cut the apple halves into thin segments.

Place the duck breast fillets on a shelf, cover them with aluminum foil and let them rest for about 5 minutes. Pour the fat on 2 tbsp from the pan.

Scoop the apples through the shortening. Add the vinegar, apple syrup and oregano and bring everything to the boil.

Place the lid on the pan and let the apple slices simmer in 4 minutes.

In the meantime, cut the duck breast fillet into thin slices and place the slices on the hot plates.

Season the apples with pepper and salt and stir in the spring onions. Spoon the apple slices next to the meat.
