Eton mess with rhubarb
Dessert or dessert, made from rhubarb, ginger syrup, whipped cream, cinnamon, strawberries and small meringues.

Clean the rhubarb and cut into pieces.

Put in a pan with the ginger syrup. Bring to the boil and simmer for 20 minutes until the rhubarb is soft. Allow to cool for 1 hour.

Beat the cream with the ginger syrup and cinnamon. Cut the strawberries into pieces.

Divide half the rhubarb over as many (whiskey) glasses as you need. Spoon half of the whipped cream.

Crumble the meringuettes and spread half of the strawberries.

Make 4 more layers with the rest of the rhubarb, whipped cream, meringuettes and the strawberries.
