Falafel with fresh tomato salad
With ras el hanout spiced wraps with falafel balls, a salad of tomatoes, cherry tomatoes and red onion and a dip of mild yoghurt and mint.

Heat the oil in a frying pan and fry the falafel in 5 min. Golden brown. Take the falafel out of the pan and keep warm under a plate.

Meanwhile, mix the ras el hanout with the oil and brush the wraps with it. Heat the wraps in parts in a skillet. Keep warm under a plate.

Meanwhile cut the tomatoes and cherry tomatoes into slices and the onion into thin rings.

Spread over a flat dish and drizzle with the oil. Season with pepper and salt.

Cut the fresh mint fine and mix two thirds of it with the yogurt. Season with pepper and salt.

Garnish the tomato salad with the rest of the mint. Serve the wraps, falafel and yogurt separately.
