Chop the onion and cut the pepper into strips. Let the naps drain.

Heat the oil in a frying pan and fry the bacon on low heat 10 min.

Raise the heat and fry for another 2 minutes. Keep separate. Fry the onions, peppers and currants in the remaining fat for 5 min.

Halve the tomatoes. Add the tomatoes and cook for another 2 minutes. Remove the pan from the heat, let the contents cool down.

Beat the eggs. Mix the eggs with the vegetables, bacon and pepper.

Heat the oil in a large frying pan. Add the egg mixture and cook on low heat for 6 minutes with the lid on the pan.

Turn the omelette over and cook for another 2 minutes so that it is warm, but still soft inside.
