Farmers omelette with chives
A tasty Dutch recipe. The vegetarian main course contains the following ingredients: vegetable stock, eggs, milk, butter, Dutch stir-fry mix (a 450 g, freezer), cooking cream (bottle 250 ml), fresh chives ((25 g) and finely chopped).

Dissolve the vegetable stock tablet in 60 ml of hot water.

Preheat the oven to 90 ° C.

Whisk 2 eggs each with 1 tbsp milk, 1 tbsp broth and some pepper and fry in a frying pan (with non-stick coating) with 5 g of butter and a thin omelette.

Let the omelette slide on an oven-safe plate, place a piece of aluminum foil on it and put it in the oven.

Bake 3 more omelettes, keep them warm in the oven.

Remove the herb butter from the stir-fry mix and heat it in a wok or deep frying pan.

Stir fry the Dutch stir fry mix according to the instructions on the package.

Add the cooking cream and bring it to the boil.

Season with salt and pepper.

Remove the omelets from the oven and distribute them over four plates.

Divide the potato-vegetable mixture over the omelets and fold it double.
