Cut the Chinese cabbage lengthwise into 8 pieces and place in a large bowl.

Bring the water to the boil and add the salt. Let boil for 1 min until the salt has dissolved. Pour over the coals and leave for 30 minutes.

Scoop occasionally. Drain, rinse under cold running water and drain well.

Put the garlic, ginger, vinegar and fish sauce in a high beaker and puree with a hand blender until smooth.

Add the sugar, paprika, sriracha sauce and sesame seed and mix into a (thick) marinade.

Mix through the coals until all coal is covered. Put the kimchi in a lockable pot and leave to marinate in the refrigerator for at least 3 hours.
