Starter with smoked salmon, beetroot and horseradish.

Spread a slice of salmon with the horseradish, add the slices of beetroot and a tuft of cress and squeeze some lemon juice over it.

Prick it on a fork and finish with a dash of olive oil. Make as many forks as you want.
