Shrimp poffertjes with herb butter


A tasty Dutch recipe. The starter contains the following ingredients: fish, lemon (scrubbed), flat parsley ((a 20 g), finely chopped), butter (at room temperature), chives ((25 g), finely chopped), poffertjes mix (a 400 g), full milk, egg (beaten), Dutch shrimp ((a 100 g) and chopped).

Directions

  1. Grate the yellow skin of the lemon and squeeze out the fruit. Keep 1 tbsp parsley apart, mix the rest with 125 g butter, lemon zest and half the chives. Add lemon juice, pepper and salt. Roll the butter into a sausage in cling film and close the ends. Put in the refrigerator until use, but at least 1 hour.
  2. Preheat the oven to 140 ° C. Melt 25 g of butter in a saucepan over low heat. Mix with the small pancake mix, the milk, the egg and a pinch of salt to a smooth batter. Add the rest of the chives and the prawns and mix.
  3. Heat the small pancake pan and grease with a little butter. Spoon the batter into the cavities and cook the small pancakes in approx. 3 min. Until done. Turn halfway. Continue until the batter is finished. Keep the small pancakes covered with aluminum foil in a dish in the oven. Divide them over 6 plates and serve with a slice of herb butter. Sprinkle with the parsley.
