Fresh endive stew with pine nuts


Stew with raw endive, paprika and pine nuts with cheese for a day without meat or fish

Directions

  1. Roast the pine nuts in a dry pan over low heat.
  2. Cut the peppers into strips.
  3. Heat the margarine in a pan and fry the peppers briefly.
  4. Bring the water to a boil in another pan. Remove the pan from the heat and add the bags of mashed potatoes with a whisk.
  5. Add the pine nuts, peppers, cheese and endive to puree and stir well. Season with salt and pepper.
