Fresh endive stew with pine nuts

Roast the pine nuts in a dry pan over low heat.

Cut the peppers into strips.

Heat the margarine in a pan and fry the peppers briefly.

Bring the water to a boil in another pan. Remove the pan from the heat and add the bags of mashed potatoes with a whisk.

Add the pine nuts, peppers, cheese and endive to puree and stir well. Season with salt and pepper.
