Roast the pine nuts in a frying pan without oil or butter in 3 min. Golden brown. Let them cool on a plate.

Tear the leaf of the lettuce in pieces and set aside. Keep some arugula behind for garnishing, cut the rest coarse and set aside. Slice the garlic. Heat the oil in a wok. Fry the garlic and chilli pepper for 1 min.

Add the spinach and let it shrink in three minutes. Add the lettuce and rocket and cook for another 2 minutes. Put the reserved rocket through it and sprinkle with the pine nuts.
