Fried baby potatoes with herbs

Halve the potatoes and cut large ones into quarters. Boil 10 minutes in water with salt. Drain and let dry with the lid on the pan for 1 min.

Heat the oil in 1 large or 2 smaller frying pans and fry the potatoes in 10 min. On medium heat until golden brown.

Meanwhile, spray the leaves of the sprigs of thyme and finely chop the chives and parsley.

Add the herbs to the potatoes and cook for another 1 min. Season with (freshly ground) pepper and possibly salt.
