Bring the water to the boil with the salt.

Meanwhile, mix the couscous and baharat in a bowl. Pour the boiling water over it. Leave for 5 minutes and stir the couscous with a fork.

Grate the yellow skin of the lemon and squeeze out the fruit. Add the rasp to the couscous, and juice to taste.

Slice the leaves of mint, parsley and coriander. Mix with the pomegranate seeds through the couscous. Season with pepper and salt.
