Fried egg with tomato and avocado

Heat the oil in a large frying pan at medium height and place the slices of tomato in it. Grind a little salt and pepper and sprinkle with the herbs.

Break the eggs one by one in a cup and let them slide with whole yolks between the tomatoes. Turn the heat source a little lower and leave the eggs with the lid slanting on the pan in about 5 minutes of cooking.

Meanwhile, halve the avocado and squeeze the pit out. Scoop the flesh from the skin with a spoon and cut into thin slices.

Put the slices of avocado on the fried eggs for the last minute. Sprinkle with salt and serve immediately. Tasty with toasted bread.
