Fried fish with sweet and sour sauce
Fried cod with a sweet and sour sauce of mango / passion fruit smoothie, chili sauce and rice vinegar.

Cut the cod into strips of 2 cm wide and put in a large sandwich bag. Add the cornflour and some salt, keep the bag tightly closed and shake until the fish is covered with an even layer of cornstarch and salt.

Heat the oil in a frying pan and fry the fish over high heat for 4 minutes. Turn halfway carefully.

Meanwhile, bring the chilli sauce, rice vinegar, fish sauce and smoothie to the boil in a saucepan. Let it simmer for 1 min. Remove the leaves from the coriander.

Drain the fish on kitchen paper and then place on a flat dish. Pour the sauce over it and sprinkle with the coriander leaves. Serve immediately. Delicious with pandan rice.
