Gluten-free flat bread with pea spread


Flat bread with gluten-free bread mix and fennel seed with a surprising spread of peas, watercress and feta.

Directions

  1. Put the bread mix, yogurt, baking powder, fennel seed and salt in a bowl and mix by hand into a cohesive dough.
  2. Divide into 8 portions and form flat rolls.
  3. Heat the grill pan without oil or butter and grill the rolls in parts in approx. 3 min. Crunchy and golden brown.
  4. Turn around and drizzle with the olive oil. Gril still approx. 3 min.
  5. Meanwhile, make the spread. Put the peas in a bowl and pour boiling water over it. Put in a colander and drain.
  6. Remove the hard stems from the watercress.
  7. Put the peas, 3 / 4th of the watercress, the feta and the extra virgin olive oil in a high cup and puree with the hand blender to a spread.
  8. Serve the flat bread with the spread in a wide bowl and sprinkle with the rest of the watercress.
