Grapefruit cocktail
A tasty recipe. The lactose-free starter contains the following ingredients: fish, red grapefruit, fennel bulb, Spanish extra virgin olive oil (500 ml bottle, AH Excellent), lamb's lettuce (75 g), crayfish (a 100 g), mayonnaise (350 ml and AH).

Use a sharp knife to cut the skin and the white skin of the grapefruit. Cut the segments of flesh above a bowl from the membranes and keep separate. Squeeze the rest of the juice from the grapefruit above another bowl. Cut the fennel bulb lengthwise into slices that are as thin as possible. Add with the oil to the grapefruit juice and leave to marinate for 5 minutes. Season with salt.

Spread the lamb's lettuce over the whiskey glasses and press lightly. Spoon the grapefruit, fennel and crayfish on top and sprinkle with the remaining grapefruit marinade. Season with salt and pepper. Spoon 1 tsp of mayonnaise into each glass.
