Grilled-pepper salad with feta and mint


Salad of grilled peppers, lime, mint and feta.

Directions

  1. Light the barbecue. Halve the yellow and red pointed peppers and remove the stem set and the seed lists.
  2. Cut each half into 4 equal pieces and mix with the oil. Grill the pepper pieces 6-8 minutes on the barbecue. Turn halfway.
  3. Meanwhile, squeeze out the lime and cut the mint leaves.
  4. Mix the rest of the oil, 1 tbsp lime juice (per 4 persons), half of the mint, pepper and possibly salt into a dressing.
  5. Mix the peppers with the dressing and spread over a bowl. Crumble the feta and garnish with the rest of the coin.
