Grilled zucchini salad
A tasty recipe. The vegetarian main course contains the following ingredients: apple, courgettes (in thick slices), oil, lime (scrubbed), coriander powder, (semi) full yoghurt, liquid honey (eg floral honey), walnuts (coarsely chopped) and fresh parsley (chopped ).

Light the barbecue.

Remove the core from the apple and cut it lengthwise into 1/2 cm slices.

Spread the apple and zucchini thinly with oil and sprinkle with salt and (freshly ground) pepper to taste.

Place the apple and zucchini on a greased griddle on the barbecue and grill on both sides approx.

Until they have golden brown stripes.

Place the grilled slices of apple and zucchini roof-wise in a bowl.

Grate the green skin of the lime and squeeze out the fruit.

Mix 1 tablespoon lime zest, 1 tbsp lime juice, coriander powder, yogurt, honey and salt and (freshly ground) pepper to taste in a bowl.

Pour the dressing over the grilled apple and zucchini.

Sprinkle with the walnuts and parsley.
