Preheat the oven to 225 ° C and place the baking tray in the middle of the oven.

Grease the ramequins with some butter and sprinkle the inside with the breadcrumbs. Make sure the bottom and sides are covered.

Melt the butter on low heat without coloring and add the flour. Cook for 3 minutes on low heat.

Add the milk while stirring. Bring to the boil while stirring. Leave on low heat for 3 minutes and cook gently from the heat.

Slice the ham and chives and stir in the sauce together with the cheese and the mustard. Allow to cool. Stir frequently.

Split the eggs. Make a bowl fat-free: rub it with a cut lemon or wash the bowl with hot water and detergent and dry the bowl.

Beat the egg whites in the bowl with a mixer. Stir the egg yolks through the ham cheese mixture. Then spat the protein quickly.

Divide the mixture over the ramequins. Put in the oven for about 20 minutes.

Decrease the temperature immediately after you put it in to 200 ° C. Do not open the oven door during the baking time! .
