Bring the almond drink with the oatmeal and the cinnamon in a small pan to the boil and simmer for about 3 minutes.

Remove the pan from the heat and add the fresh mint. Season with honey.

Drizzle the apple pieces with lemon juice and add them to the oatmeal porridge. Allow to cool for about 1 minute and add the almonds.
