Herring mousse on beetroot salad
A tasty Dutch recipe. The starter contains the following ingredients: fish, boiled beetroot (a 500 g bowl), Granny Smith apple, lemon juice, fresh chives (30 g), light smoked herring fillet (200 g), whipped cream (a 125 ml) and rye bread.

Peel the beetroot and cut into thin slices.

Wash the apple, halve it, remove the cores and cut the apple into thin slices.

Sprinkle with lemon juice, against discoloration.

Grind chives.
-
Remove the skin from herring and finely chop the herring with a fork.

Beat whipped cream.
-
Mix herring with whipped cream and half of chives.
-
Season with salt and pepper.

Arrange the apple and apple slices on four plates.
-
Create herring mousse in the middle.
-
Sprinkle with chives.

Serve mousse with rye bread..
