Herring salad with apple
A tasty Dutch recipe. The lunch contains the following ingredients: fish, Dutch New herring, apple cider vinegar, mustard (coarse), olive oil (extra virgin), apples (sweet acid (eg Elstar), with skin in thin segments), shallot (chopped), bread (uncut pain rustique), fresh parsley ((bags a 30 g) and finely chopped).

Remove the tail of the herrings and cut the herring fillets in width into narrow strips.

Beat in a bowl the vinegar with the mustard smooth and stir in 2 tablespoons of oil.

Season the dressing with salt and (freshly ground) pepper.

Scoop the herring, apple and shallot through the dressing.

Heat the grill pan.

Brush the bread thinly on both sides with the rest of the oil.

Roast the bread on both sides until golden brown and crispy and put it on four plates.

Divide the herring salad and sprinkle with the parsley.
