Herring tartare
A tasty Dutch recipe. The starter contains the following ingredients: fish, Dutch New-herring, olive oil, radishes (coarsely grated), cream fritters, lemon juice and fresh dill (finely chopped).

Remove the tail of the herrings and cut the herring fillets into small cubes (3-4 mm). Brush the inside of the coffee cups thinly with the oil and cover them with cling film.

Mix in a bowl the herring with radish, crème fraîche, lemon juice, 1 tbsp dill and pepper and salt. Divide the herring mixture over the coffee cups. Press well.

Put each cup upside down on a plate. Carefully remove the plastic foil with the cup, so that the tarttails are nicely placed on the plate. Garnish each tartlet with a tuft of the rest of the dill and pepper.
