Herring tartare


A tasty Dutch recipe. The starter contains the following ingredients: fish, Dutch New-herring, olive oil, radishes (coarsely grated), cream fritters, lemon juice and fresh dill (finely chopped).

Directions

  1. Remove the tail of the herrings and cut the herring fillets into small cubes (3-4 mm). Brush the inside of the coffee cups thinly with the oil and cover them with cling film.
  2. Mix in a bowl the herring with radish, crème fraîche, lemon juice, 1 tbsp dill and pepper and salt. Divide the herring mixture over the coffee cups. Press well.
  3. Put each cup upside down on a plate. Carefully remove the plastic foil with the cup, so that the tarttails are nicely placed on the plate. Garnish each tartlet with a tuft of the rest of the dill and pepper.
