Indian chicken stir fry with cauliflower and rice
An evening in India! Delicious with chicken fillet, cauliflower, tomatoes and rice.

Bring a large pan of water with salt, if necessary, to the boil. When the water boils, add the rice, bring to the boil again and cook for 15 minutes until done.

Drain the rice, put it back in the pan and leave with the lid on the pan until use.

Meanwhile, clean the onions and cut into pieces. Clean the garlic and cut finely. Peel the ginger and cut finely.

Cut the cauliflower florets into 3 cm pieces.

Heat the oil in the wok and fry the onion, garlic, ginger and curry powder for 3 minutes on low heat. Add the chicken cubes and fry for 1 min on a high heat.

Add the cauliflower florets and cook for 6 minutes.

In the meantime cut the tomatoes into pieces. Add together with the water and bring to the boil. Turn down the heat and cook for 8 minutes.

Stir frequently. Season with pepper and salt.

Divide the rice over deep plates and scoop the vegetables.
