Indonesian mackerel with onions and beans

Preheat the oven to 200 ° C.

Halve the lemon and squeeze half of the fruit. Cut the other half into pieces.

Mix the lemon juice with the soy sauce, sambal, ketchup and the water in the baking dish.

Carefully remove the skin from the mackerel fillets and place the fish in the dish.

Put in the middle of the oven for about 25 minutes until the sauce begins to simmer. Turn the mackerel after 12 min.

In the meantime, prepare the rice according to the instructions on the packaging.

Scrape the cucumber with a cheese slicer into thin slices and place in a bowl. Add the vinegar and the water. Season with pepper and salt.

Bring a pan of water to the boil, add the green beans and cook for 8 minutes until al dente. Drain.

Serve the beans, rice, lemon wedges and cucumber salad with the mackerel.

Scoop some of the sauce from the oven dish over the mackerel and sprinkle the rice with the fried onions.
