Italian chicory with arugula


A tasty recipe. The vegetarian side dish contains the following ingredients: pine nuts, chicory, olive oil, onion (chopped), garlic (finely chopped), dried rosemary, arugula (lettuce and 75 g).

Directions

  1. Roast 3 tb pine nuts in a frying pan without oil or butter until golden brown.
  2. Let cool on a plate.
  3. Cut the underside of the stalk chicory and cut the chicory in half.
  4. Remove the hard core.
  5. Remove the leaves, wash and dry them.
  6. Heat the oil in a frying pan and fry the onion for 2 minutes.
  7. Add the garlic and rosemary and cook for 1 min.
  8. Spoon the chicory and stir-fry 2 minutes.
  9. Season with salt and pepper.
  10. Remove from the heat and mix in the rocket.
  11. Sprinkle with the pine nuts..
