Kale, potatoes, Catalan sausages and egg from the frying pan.

Directions

  1. Peel the potatoes and cut into ½ cm slices. Boil 8 minutes in water with salt. Drain and allow to cool slightly.
  2. In the meantime, remove the skin from the sausages and cut the onion into rings. Heat the oil in a large frying pan. Fry the onion for 3 minutes on medium heat.
  3. Add the sausage meat and cook for 5 minutes. Fry the potato slices for 1 min. Change regularly.
  4. Meanwhile, beat the eggs in a large bowl. Put the kale in a sieve and push the moisture out with the convex side of a spoon.
  5. Stir the kale through the egg.
  6. Season with (freshly ground) pepper and possibly salt.
  7. Pour the egg-kale mixture over the potatoes and spread evenly over the pan.
  8. Lower the heat and fry for 15 minutes with the lid on the pan, until the egg has solidified.
