Kale with sausage from the frying pan
Kale, potatoes, Catalan sausages and egg from the frying pan.

Peel the potatoes and cut into ½ cm slices. Boil 8 minutes in water with salt. Drain and allow to cool slightly.

In the meantime, remove the skin from the sausages and cut the onion into rings. Heat the oil in a large frying pan. Fry the onion for 3 minutes on medium heat.

Add the sausage meat and cook for 5 minutes. Fry the potato slices for 1 min. Change regularly.

Meanwhile, beat the eggs in a large bowl. Put the kale in a sieve and push the moisture out with the convex side of a spoon.

Stir the kale through the egg.

Season with (freshly ground) pepper and possibly salt.

Pour the egg-kale mixture over the potatoes and spread evenly over the pan.

Lower the heat and fry for 15 minutes with the lid on the pan, until the egg has solidified.
