Limoncello of vodka, lemons, sugar and water

Pour the vodka into the bottle or jar.

Peel the yellow skin of the lemons with a peeler and add to the vodka.

Close the bottle or jar and put in a cool, dark place for 3 weeks. Shake occasionally.

Put the sugar and water in a saucepan and bring to the boil. Stir until the sugar is dissolved and remove from the heat. Allow the sugar water to cool.

Add the sugar water to the lemon vodka and close the bottle or jar again. Leave for another week in a dark, cool place.

Pour the liqueur through a sieve and collect in a measuring cup. Return to a clean bottle.

Serve the limoncello cold after the meal. Or make a fresh cocktail by pouring a dash in a glass of prosecco.
