Lukewarm bantam artichoke salad


A tasty Spanish recipe. The main course contains the following ingredients: meat, potatoes (pound of crab, a 500 g), Catalan sausage (290 g), olive oil, artichoke hearts ((400 g), drained), cherry tomatoes ((250 g), halved), basil ((15 g), leaves ripped) and lemon (scrubbed).

Directions

  1. Boil the potatoes in water with salt in 15 minutes until done. Drain, allow to cool slightly and halve them. Put in a bowl.
  2. Cut each sausage into 4 pieces. Heat 2 tbsp oil and fry the sausage in 5 min. Brown and done. Spoon the sausage with the potatoes.
  3. Cut the artichoke hearts into quarters and add to the potatoes together with the tomatoes and the basil.
  4. Grate the yellow skin of the lemon over the potatoes and squeeze out the fruit. Sprinkle the salad with 3 tbsp lemon juice, 3 tbsp oil and salt and pepper. Spoon and serve lukewarm.
