Lukewarm salad of white cabbage
A tasty Dutch recipe. The side dish contains the following ingredients: meat, freshly sweet apple (eg jonagold), hazelnuts ((a 95 g), coarsely chopped), extra virgin olive oil, white wine vinegar, garlic (pressed), white cabbage, Coburger raw ham (slices, ca 145 g) and white raisins (bag 500 g).
Cut the unpeeled apple into quarters, remove the core and cut into thin parts. Roast the hazelnuts in a frying pan without oil or butter in 3 min. Golden brown. Let cool on a plate. Beat a dressing of 4 tbsp oil, vinegar, garlic. Add pepper and salt to taste.
Cut the coals into strips that are as thin as possible. Heat the rest of the oil in a frying pan and fry the ham in approx. 5 minutes. Remove from the pan and drain on kitchen paper. Stir-fry the coals with the raisins 2 min. On high heat in the remaining shortening. Turn off the heat and mix the apple and the dressing with the cabbage.
Divide the salad into 4 plates, divide the ham over it and sprinkle with the hazelnuts. Tasty with baked potato wedges and a beef tartlet.
