Directions

  1. Fry the bacon in the oil until crisp and drain on a plate with kitchen paper.
  2. Peel the mango and cut the mango meat along the pit.
  3. Cut the flesh into cubes of 1/2 cm.
  4. Mix the bacon cubes in a bowl with the mango and the shallot.
  5. Spoon the vinegar, coriander and pepper to taste and keep the salsa covered in the refrigerator..
