Mango salsa with bacon
A tasty recipe. The side dish contains the following ingredients: meat, smoked bacon cubes, olive oil, mango, shallot (finely chopped), white wine vinegar and fresh coriander (finely chopped).

Fry the bacon in the oil until crisp and drain on a plate with kitchen paper.

Peel the mango and cut the mango meat along the pit.

Cut the flesh into cubes of 1/2 cm.

Mix the bacon cubes in a bowl with the mango and the shallot.

Spoon the vinegar, coriander and pepper to taste and keep the salsa covered in the refrigerator..
